Mediterranean Orzo

This pasta recipe makes a great side dish for fish, chicken or pork. Or make it the star of the show by serving it cold with cucumbers, onion, feta cheese, and olives.

Ingredients

  • 2 cups Orzo Pasta

  • 8-10 Cherry Tomatoes halved

  • 3 Garlic cloves finely chopped

  • Salt and Pepper to taste

  • Parmesan Cheese to taste

  • Crushed Red Pepper pinch

  • Basil Handful

  • 2 Tbsp Olive Oil

Directions

  • Cook Orzo Pasta according to package, usually 8-10 minutes. After pasta is cooked save a cup of the pasta water for use later (Make sure to salt the water)
  • Heat large pan to med heat. Add olive oil, garlic, and red pepper flakes allow to slowly simmer for a couple of minutes till fragrant 2-3 minutes.
  • Add cooked Orzo pasta, tomatoes, and some of the reserved pasta cooking water, cook until the tomatoes are soft 3-4 minutes
  • Add a generous amount of freshly grated parmesan cheese and a handful of chopped basil.
  • If pasta becomes to dry just add more of the pasta water to rehydrate

Notes

  • This also makes a great cold salad just cook ahead of time and chill in the fridge overnight. You can add cucumbers, onions, feta cheese, and olives to make a delicious Greek inspired cold pasta salad
